Did you see that they banned Foie Gras in some US states? Well, after they did that, sales of foie gras went up big time in those states! That gives me hope in human nature!!

Ah bien là, tu tombes juste à point… Merci de tes conseils. Nous mangerons donc le foie gras avant le dessert. Pour ce qui est du vin… wow : tu ouvres vers de nouvelles possibilités. J’hésite entre un vin blanc un peu sucré, autre que le traditionnel Sauternes, et un rouge du genre Zin californien comme tu le proposes (et pourquoi pas un bon Australien prêt à boire ?). Nous irons avec ce que nous pourrons trouver sous les plamiers des Antilles (françaises, bien sûr !)…

I guess I have not visited for a while you have been busy! Good article! I like the way you have made it flexible pairing with different wines. I love foie gras and these people that say it is bad for the goose, are the goose, just stupid geese are pigs! I like the idea of doing the liver with cheese or even foie gras salad then cheese or salad cheese and foie gras hahaha. Well you get my point I hate being stiff about courses. I like the dessert wine following the red dinner wine! Keep on taping my friend!

Hi Olivier, I enjoyed this post, just wish I’d seen it around Christmastime. I love Champagne on Christmas Eve and I had seen some duck-liver foie gras at a nearby shop — was tempted to get it, but for some stupid reason didn’t. I’m going to do it soon!
The ban on foie gras was in Chicago (I live about 2 hours south of Chicago — maybe other cities have banned it but I think Chicago has the distinction of being the first). Idiotic! Ridiculous! Unbelieveable! I hear, as I’m sure you have, that some chefs are “giving” it away, since it can’t be sold. They’re selling, like, the toast for some big price, and including foie gras gratis. Way to get around the ban!
